If you are considering getting a fermentation crock for sauerkraut or pickles, this is the only kind you want. I tried the open crock method like my mother and grandmother used, but if you're a modern cook with a full time occupation outside the home you don't have time to monitor an open crock. There are too many things to go wrong with the open crocks.

My husband bought me a 7.5 litre crock 3 years ago and I liked it so well he bought me another smaller 5 litre last summer. They are definitely worth the cost and time to get them. I have had amazing no hassle sauerkraut every time I have made kraut in my Harsch Crock and they are great for making pickles and even fermenting wine.

I love my Harsch Crock!

This Crock is amazing well worth the price and if I could afford it I would have more. If you like kraut and fermented vegetables this is the top of the line. As long as you keep the trough full of water so no air gets in its fool-proof. Happy Fermenting.

I've been thinking about purchasing a Harsch Crock for some time, finally did it! It arrived today - can't beat the discount price and free shipping, I saved at least $50 on this purchase.

Now...the pictured crock would lead you to believe it has a smooth surface - not so. Mine has more than a few sharp protruding sand like grainy particles embedded in the surface, sharp enough to scratch tender fingers if grabbed the wrong way, and the bottom is very rough and scratchy, so I must use a mat before placing it on the counter-top. The weight stones are also roughly constructed with more than a few crevasses so must be carefully cleaned between uses.

This does not mean the crock will not perform as advertised, it simply means don't expect a "work of art" smooth surface texture - a little surprising considering the build up about it's "German quality" however there seems to be a great following of folks who use this crock and are very pleased with it's performance.

I have had this Harsch Gairtopf Fermenting Crock Pot - 7.5 Liter - ME7428 on my wish list for years. I at long last finally made the purchase when I found it recently through an Amazon link for $119 and free shipping!!! It is the German fermentation stoneware crock by Harsch Steinzeug and has no labelling for Miracle (the sole importer) as it is shown at Amazon. (Mine just arrived from Germany. It was on back order for some time).

This fermentation crock pot is highest quality as you might expect from German craftsmen. It truly is the Mercedes Benz of stoneware fermentation pots. It is made of stoneware and covered with a lead-free glazing. It is beautiful and easy to handle, clean and use.

The unique Harsch method of fermentation is proven. The crock includes 2 stoneware weighing stones which replace the wooden board and cloth of other methods. (If you've ever done fermentation that way, you know the problems you can have). Furthermore the lid has a deep water groove which provides an airtight sealing that prevents undesired yeast from forming. Clear instructions are included as well as some basic recipes.

I purchased the 7.5 litre size. There is one smaller at 5 litres and several much larger ranging from 10 to 50 litres. I was a little afraid that I had chosen a crock much too large for just a single person like myself but I'm very glad I settled on the 7.5L. It's perfect and I'm glad I didn't choose the smaller one. I have 4 heads of organic cabbage, about 12 lbs, fermenting right now. Perfect! Considering how much I have to spend each week on store-bought organic, unpasteurized sauerkraut or other cultured vegetables ~ my Harsch crock is going to pay for itself in no time!

I love it and would buy the Harsch Gairtopf Fermenting Crock Pot - 7.5 Liter - ME7428 all over again!

These crocks are revolutionary. The water seal prevents you from frequently having to scrape mold/mildew off the top. You can preserve any kind of fruit and vegetable using this with simple instructions. Lactic acid fermentation is by far the healthiest way to preserve food w/o the need for an abundance of salt(just a little to start until the fermentation process gets humming.) I made a batch of Sour Kraut when fresh organic Cabbage was available from the farmers' market.Also, I added garlic, apples, leaks, and juniper berries. It turned out to be the best Sauer Kraut I've ever eaten. After all the heavy fermentation process is completed, you just have to keep it in a cool placed like the garage in the winter or in a hole in the ground the rest of the year(or root cellar). I access it once every couple of weeks to fill up my mason jar I keep in the fridge. When I get low I get more Kraut from the crock. Towards the end, you just fill up several mason jars full and keep them in the fridge(lasts for a couple months in the fridge) and start a new batch while you're finishing up the last. It takes about 6 weeks to make a good batch of Kraut.
